Veggie Scramble
Ingredients
- ½ cup Bob Evans® Egg Whites
- 1 tbsp olive or coconut oil
- ½ cup chopped bell pepper
- 1 cup chopped spinach
- ¼ cup cooked beans or grains (make sure pre-prepared)
- ¼ cup Greek yogurt
Instructions
- Heat the oil in a large skillet, add in peppers, cook for 1 minute
- Add in your spinach and pre-cooked beans or grains for another minute
- Add your egg whites and cook until opaque, season with salt and pepper. Top with Greek yogurt
