Quinoa Egg White Scramble

Ingredients
- 1 cup Bob Evans® Egg Whites
- ½ cup uncooked quinoa
- ½ tsp cumin
- ¼ cup salsa
- 1 tbsp cilantro, chopped
- Salt and pepper, to taste
- 2 cups baby spinach
Instructions
- To make quinoa, add ½ cup of water to a small saucepan and thoroughly rinse the quinoa. Add rinsed quinoa to saucepan and bring to a boil, cover and reduce heat and simmer for about 13 minutes. Remove the heat, keeping quinoa covered, and allow it to sit for 5 minutes. Then fluff with a fork.
- Mix in cumin, salsa and cilantro with quinoa mixture and set aside.
- Spray a nonstick skillet with cooking spray over medium heat and add in egg whites and spinach, stirring frequently until eggs are set, about 2 to 3 minutes.
