Veggie Scramble

  • ½ cup Bob Evans® Egg Whites
  • 1 tbsp olive or coconut oil
  • ½ cup chopped bell pepper
  • 1 cup chopped spinach
  • ¼ cup cooked beans or grains (make sure pre-prepared)
  • ¼ cup Greek yogurt


  1. Heat the oil in a large skillet, add in peppers, cook for 1 minute
  2. Add in your spinach and pre-cooked beans or grains for another minute
  3. Add your egg whites and cook until opaque, season with salt and pepper. Top with Greek yogurt
