Quinoa Egg White Scramble

  • 1 cup Bob Evans® Egg Whites
  • ½ cup uncooked quinoa
  • ½ tsp cumin
  • ¼ cup salsa
  • 1 tbsp cilantro, chopped
  • Salt and pepper, to taste
  • 2 cups baby spinach


  1. To make quinoa, add ½ cup of water to a small saucepan and thoroughly rinse the quinoa. Add rinsed quinoa to saucepan and bring to a boil, cover and reduce heat and simmer for about 13 minutes. Remove the heat, keeping quinoa covered, and allow it to sit for 5 minutes. Then fluff with a fork.
  2. Mix in cumin, salsa and cilantro with quinoa mixture and set aside.
  3. Spray a nonstick skillet with cooking spray over medium heat and add in egg whites and spinach, stirring frequently until eggs are set, about 2 to 3 minutes.
